People\u2019s biggest fear is that their turkey will be dry after cooking it.<\/strong> This is a reasonable fear, because \u201croasting\u201d is a dry-heat convective cooking process. When roasted, your turkey is cooked indirectly through the use of hot air. Hot air will evaporate moisture, making your turkey dry.<\/p>\n
