I’m becoming a bigger fan of yours every day, Chef Todd. The flavors happening in my kitchen are blowing my mind, and so much of it is inspiration from you. I’m on the cusp of a new signature dish, and my first sous vide experiment was yesterday. Your “just the chef in his own kitchen” (no crew) vids are pure gold. I suggest a virtual tip jar.

You are sooo bad! You got me! Cooked some wonderful braised beef short ribs last night served over egg noodles. Forgot to take a picture and my husband ate that all. Made a sauce with the drippings. Cooked them in a small amount of red wine that I used to deglaze the pot. Cooked them in my instant pot and they were wonderful. Learning to have a little more confidence in the kitchen! Thanks!
